Due to the logistics of Kyle working between Mount Jagged and Kangaroo Island throughout vintage with Stoke Wines, we decided to do two picks for this Cabernet Franc. The first was to be our carbonic portion, followed by a Pied De Cuve for our culture and secondly a machine harvester to pick the rest for us. The Franc came from the lower section of the vineyard from 50 year old vines. Our main pick was on the 1st of March 24’ and we got 1.2 tonnes. On the Western part of this block are beautiful gum trees that give a subtle eucalyptus and cooling sense taste in the wines. Having this in mind we knew the carbonic portion was going to blush it up and push brighter fruit notes. We wanted to be as gentle as possible when extracting tannin during ferment. No pumpovers, just hand plunged twice a day and left on skins for 9 days before being pressed off to two puncheons. 8 months in seasoned French Puncheons. Bottled unfined and unfiltered.
To us, this wine represents and shows where it comes from and we couldn’t be bloody prouder.
